Adventures with the Ebelskiver

I was perusing the Williams-Sonoma catalog this weekend and saw these delicious looking blueberry-filled pancakes that I said we must have. They’re called Ebelskiver. That’s Dutch for little balls of dough filled with your choice of yummyness!
I thought Linens N Things might carry a cheaper version of the welled pan that W-S is selling for $35. I was right. LNT had a cast iron version for $19.99 complete with pan mitt, wooden skewers to flip the pancakes, a batter injector and a powdered sugar shaker.
The Sunday morning breakfast plan turned out to be an adventure. Cast iron heats very quickly and burned pancake balls are a lot harder to turn over. Trial and error. My second batch came out a little better, but I did manage to leave burn holes on the cutting aisle when I placed the pan on it.
Despite the 15 minutes or more it took me to get it right as opposed to the 2-minute flapjack, I’m happy to report Zyla loved Ebelskiver even without syrup. Next time I’ll probably make them with regular flour pancakes than the coarse whole wheat variety we used and fill them with chocolate.
